Remember my Spectacular Failure from this week?
So, I emailed Bakerella and asked her what I did wrong. And she responded in like 5 minutes!
And here is what she said:
Hi Lesli – You basically just have them too moist.
Add less frosting next time. You can use the back of a large spoon to mix it all together and avoid the mess.
Roll the balls by hand and freeze them for a few minutes (15) then transfer to fridge to keep them chilled.
The balls need to be firm, and round. I don’t use the scooper.
Don’t insert the sticks until right before dipping. Dip the tip – insert into the ball and then dip the pop in coating.
Then stand in the styrofoam. You did a great job on the dipping by the way. That’s what most people have a problem with.
If you use less frosting the texture will be better, still very moist though.
And I always like to serve them the second or third day, because letting them sit, makes the texture more cakelike.

Isn’t that amazing! Now, I totally want to try and make them again. Maybe I’ll try again this weekend. I’ll let you know how it goes.
